A Mojito is made with 50 ml white rum, 25 ml lime juice, 20 ml simple syrup and 8 leaves of fresh mint, topped with soda water. Muddled and served in a highball glass.

Havana's highball: mint pressed gently with lime and sugar, white rum, crushed ice and soda. Press the mint, don't shred it — you want aroma, not bitterness.
